This recipe requires minimum 24 hours to prepare. It is ridiculously amazing. I can’t stop eating it!

Ingredients

2 Cups Cashews, Soaked

¼ Cup Pine Nuts

1 teaspoon Salt

2 Tablespoons Lemon Juice

1 Cup Water

5 Capsules Probiotic (or equaling 200 billion organisms)

Favorite Dried Herbs For Rolling

Procedures

Blend in high speed blender until creamy

Stir in probiotics by hand.

Pace in mason jar and rubber and cheesecloth over the top. Put in warm dark place for 10-24 hours, depending on how you like the taste. Placing it in the dehydrator At 90º will speed along the process.

Form into wheel and Place mixture in cheesecloth or nut milk bag and place in colander. Place a weighted plate on the top and let sit in the sink or on plate for 3-7 hours depending on how firm you wan the cheese.

Take out of cheesecloth and form a better wheel with hands. Cover with favorite herbs. I used Sage, Rosemary, Peppercorn, and Thyme.

Place in dehydrator to make more firm if desired. Making a bigger wheel will allow the outside to get firm but keeps the inside soft.

this is the best raw vegan cheesecake you will ever consume, and it isnt that hard to make at all! .

Ingredients:

Crust:

-2 cups pecans or almonds

-1 cup dates (soaked)

-2 tbspn cacao

-pinch of salt

Put nuts in FP until fine meal is created. Add cacao and quick pulse. Add dates and process until ball is formed. Press “dough” evenly into greased pie plate, so that the sides are covered as well.

Filling:

-4 cups cashews soaked for at least 6 hours

-1 cup agave

-1 cup coconut oil

-1 cup water

-1 tspn Vanilla

- Pour Agave, Coconut oil, 1/2 cup water, and cashews into FP or Vitamix. Slowly add more water if necessary, mixture should be really thick. Pour into pan with crust and let sit for a minute and try to get air bubbles out by tapping on the counter. Refrigerate for a few hours until hardened.

Gnache:

-1/2 cup cacao powder

-1/2 cup coconut oil

-1/4 cup agave

-1/4 tspnvanilla

-melt coconut oil in dehydrator until liquid. put into mixing bowl with all ingredients and whisk. i did this out in the sun so it would stay melted, if this is not possible i would suggest heating the bowl with hot water and wiping it dry so the bowl is hot and the coconut oil will not firm. When thoroughly mixed, pour over top of cheesecake, moving the pan around so it is evenly covered.  It should harden when being poured over the frozen cheesecake.

-put cheesecake in fridge to let soften before serving. It will stay firm in or out of fridge =)

Ingredients:

- 1 cup cashews soaked for 12 hours

- 2 tbspn  Tahini

- 1 tbspn Extra Virgin Olive Oil

- 1 tbspn Lemon

- Water

Put ingredients in high powered blender, (a food processor would work too but having a high power blender will make it thicker) and add one tbspn water at a time until a thick consistency is reached.

Ingredients:

-1/2 cup sunflower seeds soaked 3 hours

-1/2 cup cashews

-1/4 cup ground pecans

- cucumber, a piece about the size of your palm

- 1 tbspn chopped onion

-1/2 celery stick

-1 tbspn dill

-1/4 tspn curry powder

Lemon juice and salt to taste

Blend all in food processor until desired consistency is reached! Spread on some yummy hemp seed crackers or on your favorite raw bread! Or just eat as is!
