This recipe requires minimum 24 hours to prepare. It is ridiculously amazing. I can’t stop eating it!
2 Cups Cashews, Soaked
¼ Cup Pine Nuts
1 teaspoon Salt
2 Tablespoons Lemon Juice
1 Cup Water
5 Capsules Probiotic (or equaling 200 billion organisms)
Favorite Dried Herbs For Rolling
Blend in high speed blender until creamy
Stir in probiotics by hand.
Pace in mason jar and rubber and cheesecloth over the top. Put in warm dark place for 10-24 hours, depending on how you like the taste. Placing it in the dehydrator At 90º will speed along the process.
Form into wheel and Place mixture in cheesecloth or nut milk bag and place in colander. Place a weighted plate on the top and let sit in the sink or on plate for 3-7 hours depending on how firm you wan the cheese.
Take out of cheesecloth and form a better wheel with hands. Cover with favorite herbs. I used Sage, Rosemary, Peppercorn, and Thyme.
Place in dehydrator to make more firm if desired. Making a bigger wheel will allow the outside to get firm but keeps the inside soft.
