Chickens aren’t Nuggets with a side of fries! April 6, 2010

these are soo good we were fighting over the last one! taste like the real thing and are so good for you!

ingredients:

Chickun Nuggets:

- 1/2 cup corn

- 1 cup shredded carrots

- 1 cup shredded zucchini

- 2 tbspn olive oil

- garlic powder

- onion powder

- chili powder

- salt

-put the corn in the FP until pureed. add the zuc, the carrots, and garlic,onion, salt, and chili to taste.  pulse it, dont puree it you need the texture.

-on a separate plate, put the ground flax and some of each of the spices and mix it together.

-Now the tricky part: Forming the patties. This is so difficult, you have to get a feel for it. By the end i was a pro. Take some of the veggie mixture and form a nugget. Put flax on the top and flip in into the other hand to coat the bottom. Make sure its really covered.

- Place the nuggets on the teflex sheet and put in the dehydrator,  105 degrees for 7 hours. Check them now and then and make sure you flip them so both sides get dry.

Fries:

- 1/2 Jicama

-  Tumeric

- salt

- Cumin

- 2 tbspn oil

-Cut the Jicama into fry shapes and put in a big bowl or zip-lock bag.  Put oil, and spices according to your taste and shake the bag. i used probably a tspn of salt, 1/2 tspn cumin, 1/2 tspn tumeric.  Let sit for 10 or so mins to let flavors absorb! I put them in the dehydrator for a few mins to make them warm because the jicama was in my fridge.

These are a HUGE hit! so tastey… so much like the real thing!!  (recipe by Alissa Cohen)

Ingredients:

Pasta:

-4 Turnips thinly sliced using mandolin.. as thin as you can get them!

Cheese Filling:

- 1 cup pine nuts

-1 cups macadamia nuts

-1 cup walnuts

-6t braggs

-9t lemon juice

-2 cloves garlic

-1 cup parsley

-blend nuts until ground, then add other ingredients until mixed well. Spoon a big heap into the turnip slices. fold over so ends meet. Filling should pop out of the side, this is how it sticks together!

Tomato Sauce:

-2 Large tomatoes

-1/2 cup sundred tomatoes (soak until soft)

-1/4 cup fresh basil

-1 clove garlic

-6 dates

-dash of Olive Oil

-Blend tomatoes, sun dried tomatoes, basil and garlic until well blended. Add dates and olive oil and blend until smooth. Sauce should be thick. Put over the rawviolis and let sit a few hours, this will soften the turnip.

I made my rawviolis the night before and put in fridge, and they also got soft this way. i topped it with the tomato sauce a few hours before serving, and put out in the sun to make them warm! worked like a charm!

These are sooo filling! they are the same color as regular burgers and even have a rough texture! these are great!

ingredients:

-1/2 cup ground flax (not super ground, a little chunky is nice )

-1/2 cup hulled sunflower seeds

-1/8 cup pine nuts

- some sprouts

- a few dash of italian spice (oregano, basil,thyme, rosemary)

- a very small yellow pepper (the one i used was the size of a jalapeño)

- a dash of Moroccan spice

-2 tbspn oil (Hemp would be yummy!)

throw it all in the food processor. it should be a little chunky! form into patties and put on a collard leaf or raw bread. I topped it with a little bit of veganaise, tomato, sprouts, and some sun dried tomato vinaigrette.  

 

Sweet Potato Soup March 29, 2010

raw sweet potato? yup! you would never know! I found a recipe online for sweet potato soup, and change some of the ingredients to my liking. This is super filling!

Ingredients:

-1 sweet potato

- 1/2 large tomato

- hand full of cashews

- 1/4 of a red onion

-garlic clove

- dash of cumin

-dash cayenne

-dash cinnamon

-salt to taste

- dash curry powder

-cilantro

Put sweet potato, tomato, nuts, onion, cumin, cinnamon, cayenne, cumin, salt, curry, and cilantro in Vitamix. Make sure the sweet potato is chopped up a bit, even a vitamix cant break through that! Slowly add water. I ended up using slightly over a cup, it depends how thick you want it. When the soup is hot, add some more nuts. Red bell pepper can be added as well at the end for a quick second to add some chunks to the soup. I bet peas thrown in at the end would be good too! Garnish with cilantro and enjoy!

Super filling!

Ingredients:

- 1 head cauliflower

- red pepper

- 1/2 bunch cilantro

-6 Scallions

-2 Roma Tomatoes

- Avocado

-ORGANIC Taco Seasoning Packet

-Mash avocado up in a bowl with the taco packet and set aside

- Put cauliflower in food processor and PULSATE!!!! do not let run, you do not want this to get mashed up, just until the consistency of rice is reached, so that it is stiff but in small pieces. set aside in a bowl.

- Place the remainder of the ingredients in the food processor until chopped up, not completely blended. PULSATE would work good here too.

Put all ingredients in bowl with mashed avocado and mix together.

Ingredients:

-1/2 cup sunflower seeds soaked 3 hours

-1/2 cup cashews

-1/4 cup ground pecans

- cucumber, a piece about the size of your palm

- 1 tbspn chopped onion

-1/2 celery stick

-1 tbspn dill

-1/4 tspn curry powder

Lemon juice and salt to taste

Blend all in food processor until desired consistency is reached! Spread on some yummy hemp seed crackers or on your favorite raw bread! Or just eat as is!

I LOVE mexican food. And these tacos are damn good. I probably eat them at least 4 times a week :) Super Simple. Super Raw. Super Good!

Ingredients

- 2 cups walnuts

- 2 tablespoons water

- organic taco seasoning packet (or you can make your own with chili powder, coriander, cumin, and cayenne)

- Collard leaves

- Tomato

- green sauce (i will post this recipe too)

- raw sour cream (i will post a recipe for this too, i usually just use vegan sour cream.. no its not raw..)

-put walnuts and spices into Cuisinart. PULSATE! if you let it run you will just get some spicy walnut butter (i have done this!)

-add 2 tbspn of water.. and like magic the walnuts lump together like meat!

- cut out thick part of stem from collard leaf after washing.

-spread on the nut mix and throw on some lettuce, sauce, tomatoes, whatever you like on your taco! (i LOVE cilantro!)

- roll like a burrito!

-ENJOY!!!

Ingredients:

- 2 cups walnuts (soak for a few hours)

- 1 cup grated carrots

- 1 chopped onion

-1 tbspn sweetener of your choice.

-1 tbspn oil

- 2 tbspn seasoning (i used Italian seasoning, but you can use poultry or whatever kind you like!)

- 2 tbspn nutritional yeast

-sea salt to taste

put all ingredients in food processor until a “meaty” texture is formed. Form into patties and put on your favorite raw bread with a tomato and lettuce on top! I sometimes use two romaine leaves as bread, and i bet the eggplant bread would rock!

So this is an awesome 5 minute simple recipe! Great for when you get home late from work and don’t want a big mess! Great for Newbies!

Sauce:

1/2 cup cashews

1/4 cup pine nuts

3/4 cup warm/hot water

a  few dashes of dried basil

salt and pepper to taste

- add all ingredients in Cuisinart and blend until a sauce is formed!

*Putting this mixture in a Vitamix will enable it to be hot but uncooked!

Noodles:

using a vegetable peeler, make noodles from a couple zucchini’s!

Poor sauce over “pasta” and eat!
